ZESTY ENERGY BOOSTERS

These little energy balls are brilliant for when you need a little boost. We think that the mix of cashews and coconut taste almost like white chocolate! The added lemon is optional but adds a fresh and zesty flavour that pairs beautifully with the surprise cherry centre.

A reliable pick-me-up, full of raw goodness, best stored in the fridge ready for when hunger strikes.

Lemon Surprise Balls

Equipment

  • Food Processor

Ingredients

Main Ball

  • 100 g Cashews
  • 20 g Raw Extra Virgin Coconut Oil
  • 10 g Dates
  • ½-1 tbsp Lemon Juice
  • ½ tsp Lemon Rind

Added Extras

  • 10 g Chia Seeds
  • 10 g Pumpkin Seeds
  • 10 g Sunflower Seeds
  • 10 g Desiccated Coconut

Surprise

  • 6-8 Frozen Cherries depending on size

Instructions

Main Ball

  • Soak dates in hot water for a minimum of 10 minutes.
  • Blend cashews in blender until crumbly.
  • Blend cashews, coconut oil, drained dates, lemon juice and lemon rind until crumbly.

Added Extras

  • Add chia seeds, pumpkin seeds, sunflower seeds and desiccated coconut, blend to combine.

Form Balls

  • Place a scoop of mixture into the palm of your hand and squash to form a flat shape.
  • Place frozen cherry in the centre.
  • Close palm of hand to start forming a ball.
  • Roll between hands until ball is formed.
  • Set in fridge for 1+ hours.

Notes

If mixture becomes difficult to mold – place mixture in the fridge to set slightly before molding.
