HEALTH NUT CEREAL

A roasted trail mix makes the ultimate wholesome “cereal” to top fresh fruit and yogurt or simply pour milk over. The best thing about a homemade mixture is that you control the ingredients, rather than sifting through a compromised shop-bought pack and picking out the “best” bits! The main difference with this granola is that it doesn’t contain oats or added sugars such as maple syrup or honey, as they can cause a spike in blood sugar. This recipe is easily adaptable, so use your favourite nuts, seeds and spices for a truly NUTritious and delicious start to your day.

Servings: 1 500ml Jar

Equipment

  • Hob
  • Oven

Ingredients

Dry Ingredients

  • 25 g Almonds
  • 25 g Brazil Nuts
  • 25 g Walnuts
  • 25 g Chia Seeds
  • 25 g Coconut Flakes
  • 25 g Hemp Seeds
  • 25 g Pumpkin Seeds
  • 25 g Sunflower Seeds

Wet Mixture

  • 25 g Coconut Oil
  • 25 g Almond Butter
  • 2 tsp Cinnamon
  • 1 tsp Pumpkin Spice
  • pinch Salt

Add in

  • 10 g Goji Berries

Instructions

  • Preheat oven to 150°C.
  • Weigh all the nuts and seeds: almonds, brazil nuts, walnuts, pumpkin seeds, sunflower seeds, hemp seeds, chia seeds and coconut flakes, into an ovenproof dish.
  • Melt coconut oil and almond butter on the hob.
  • Stir in cinnamon, pumpkin spice and salt.
  • Mix in all the dry ingredients.
  • Pour back into the ovenproof dish and spread out evenly.
  • Roast for 30 minutes, mixing at two 10 minutes intervals to prevent burning.
  • Once cooked, leave to cool and to allow mixture to form small clumps.
  • Mix in goji berries.
