A LITTLE TASTE OF ITALY

A quick and easy snack for the pizza lover, full of traditional Italian flavours. Great for snacking or as an appetiser. Sometimes the most simple pleasures are the best. Created quicker than a take-out delivery can arrive at your door, let these little bites feed your cravings – this may be the first time you wish you had a larger courgette (or zucchini if you’re American)!

Fun Fact: Did you know that a marrow is just a large courgette?

Courgette Pizza Bites

Equipment

  • Oven

Ingredients

  • 6 slices Courgette
  • 6 tsp Tomato Puree
  • sprinkle Italian Herbs
  • sprinkle Parmesan or Cheddar Cheese or vegan cheese
  • 6 small Basil Leaves

Instructions

  • Preheat oven to 180°C.
  • Slice courgette into rounds.
  • Top with 1/2-1 tsp of tomato puree.
  • Sprinkle with mixed Italian dried herbs.
  • Top with grated cheese.
  • Cook for 20 minutes.
  • Top with fresh basil.

Notes

Diet: Low Lactose, Paleo, Vegan – depending on the cheese you choose.
